Weekly meal plan 9/26/11

Monday – Shredded pork quesadillas with side salad
Tuesday –  Pad Thai noodles with peanut butter chicken
Wednesday – Broiled Salmon with asparagus
Thursday – Abondigas soup
Friday – Unknown (haven’t figured out what we’re doing yet so no meal plan)
Saturday – Dinner at my inlaws – I’m making the dessert: Peanut Butter spice cake
Sunday – Shredded Pork (left-over) enchiladas

Depending on my day tomorrow, I plan on posting pictures of the Pad Thai instructions. I'll also post the abondigas soup and enchiladas as I make them. Yum!

Weekly Meal Plan 8/8/11

I'm feeling in kind of a rut for our food latley, maybe its just because of vacation, so I'm trying to reach out a bit in this weeks meal plan. We've also decided to cut out our Friday night eating out so I need to add something for Brad to cook on Friday nights.

Monday - Beef Fajitas (Fajita salad for me)

Tuesday - Stuffed Bell Peppers

Wednesday - Garlic Cashew Jalapeño Chicken

Thursday - (My mommies Birthday!) Spaghetti, Sausage and Meatballs. Lemon Meringue pie for dessert

Friday - Chili Cheese Hot Dogs (Home made chili)

Saturday - Fish Tacos with Black Beans and Corn

Sunday - Grilled Chicken Cobb Salad

Weekly meal plan and Brussel Sprout Hash recipie

This week I’ll be busy setting up for our mega yard sale. We’ve planned on doing a garage sale for over 2 years and never gotten to it. Needless to say, between our ‘regular’ accumulation of crud and the additional things left from Pappy’s home, our garage is packed to the roof! My job is to organize, clean and tag everything. I’ll post a before and after picture just to illuminate on the mess that it’s become. I’m hoping to make quite a bit of money, for a garage sale.

For our meals this week we’re ‘eating from the pantry.’ Meaning I am banned from the grocery store until Friday. Here’s the plan:

Monday – Breakfast: Eggs, brussel sprout hash, pancakes and fruit salad

Tuesday – Grilled (spinach bread) cheese sandwiches with tomato soup

Wednesday – Pad Thai Pork in the crock pot

Thursday – Roast Beef sandwiches with side salad and wedge potatoes

Friday – Green Chilli chicken, tortillas and beans

As for my HCG diet, I prefer not to really plan out my meals. Considering how restrictive the diet is already the thought of having every meal planned out with no spontaneity drives me crazy, so I eat what ever sounds good at the time. I usually cook up several chicken breasts, chicken patties, hard boiled eggs, lean ground beef and steak strips to keep in the fridge as my choices. I’ll admit, cooking tonight’s breakfast for dinner was rough. I LOVE the brussel sprout hash and it was everything in my power not to cheat and eat that for dinner. To combat my desire to cheat, I grilled some fresh chicken instead of the chilled, week old stuff in my fridge. I also made up a huge crown of broccoli and grilled onions. All in all it was a pretty good meal. Anthony even commented that he was envious of my grilled chicken. He still wouldn’t trade me though.

Brussel Sprout Hash

Potatoes
Yellow and/or red bell pepper
½ onion
½ lb fresh brussel sprouts
Butter
Lawries
Pepper

Usually my go to method for any kind of hash browns is frozen tater tots, they make them perfect every time! Today though, I didn’t have any so I shredded 10 small(ish) yellow potatoes that I got in my bountiful basket last week. The trick to hash browns (according to me – and this is my blog *wink*) is a good non stick skillet. I put the shredded potatoes on the hot pan with out any butter or other oil. This helps them dry out and not stick together in one big blob. Once they are starting to brown add 2 tbsp butter and continue to fry. Dice the peppers, onions and brussel sprouts then add to the potatoes. Keep frying, adding more butter if you desire, until golden brown and the veggies are tender.
Serve with a sunny side egg on top. Yum!

Weekly Meal Plan

We spent a fortune this last week and to be shamefully honest, I couldn't exactly tell you where. Sad huh? Needless to say, this weeks meal plan is based on what I have in stock and the $50 more I could bear spending.

Monday night: Steak fried rice
Tuesday: Hot Dogs, grilled onions, side salad
Wednesday: Open face tuna melts on broccoli bread
Thursday: Pasta with itallian ground turkey meat sauce
Friday: Dinner out (pay day!)

The fried rice tonight was super yummy. I had left over steak from fajitas last week and rice from this weekend.

4 cups rice (cooked in advance)
2 cups chopped steak
1 celery stock
2-3 small carrots
4 green onions
1 can water chestnuts
1 cup frozen peas
2 eggs scrambled
2 tbsp oil
1 tsp ginger
Soy sauce
Teriyaki sauce

Heat the oil over med-high, add the rice and fry for 1 min until some of the moisture is removed. Make a hole in the middle of the rice add the egg, cook until done, add in the veggies and meat. Stir together, lower the heat to medium, add the ginger and soy sauce to taste. Serve with the teriyaki sauce drizzled over top.

Meal and week plan

The Mexican food fiesta was a big success. It could have been because of the watermelon margaritas but I’m pretty confident everyone liked the food. The chili relenos was by far my favorite. It was the first time I’ve ever made them that way, casserole type. I will never make them another way again! I can’t wait for chili season so I can make up several dozen dishes to freeze. Also, because it was hot out and we were trying to minimize the heat in the house, my husband offered to grill the veggies for the calabicatas so I only had to warm them on the stove vs fully cooking them. I don’t think it made that much of a taste difference but it made a beautiful visual presentation!

This weeks meal plan is pretty light. Two items from my itty bitty freezer stash and some good ‘ol standby’s.

Monday: Cran-Pig over rice with broiled asparagus
Tuesday: Homemade chili (I’ll post the recipe tomorrow as I make it up)
Wednesday: Manicotti with a side salad and breadsticks
Thursday: Eggs, bacon, sausage and Monkey Bread with cream cheese frosting

We’re heading out for a quick family camping get away Friday night and plan on being back Sunday afternoon. I’m really looking forward to getting away from the world for a bit and reconnecting with my workaholic husband. Not sure yet where we’re going. My only requirements are somewhere we can get with in an hour or two and a flat piece of ground for the tent and a full sky of stars above.

Friday night: Fire roasted hot dogs (sounds almost fancy huh!)
Saturday AM: Pancakes, eggs, bacon
Saturday Lunch: Ham and cheese and cabbage salad
Saturday Dinner: ?
Sunday Breakfast: Cheese Eggs

This week I need to get everything ready for the camping trip, get my Easter/Spring decorations out (way late!) and I really need to dust my house, it’s bad!

Weekly Plan 3/14

This weekend I ran away for a bit. I gave the kids over to Brad and left the house for a few hours. I went out to lunch, shopping, had a manicure and pedicure and got dinner to bring home. It was magical. Yep, magical! I think I actually moaned when I sunk my feet in the hot water.

Sorry for the late post. I woke up today brimming with creativity. I got my sewing and surging machine out and made a gift for my mom. I can't say what it is yet because I missed out on my opportunity to give it to her tonight so she has to wait until tomorrow which means I don't want to post it here on the chance that she logs in tonight. But, I'm happy with it and plan on making one for myself tomorrow. I even got several loads of laundry done and kept the house clean through out the day. It's amazing how much I can get done when the girls are well and playing, instead of sick and clingy. It felt good to get creative again, sometimes I forget how much I enjoy sewing.

With cute toes, pampered fingers and a few new outfits, my outlook on this week is much cheerier than last week's. Since the girls are feeling better I plan on being out of the house as much as possible. Tomorrow we're going to Target, the park and the supermarket. Wednesday I think we'll spend most of the day at my mom's since she's hosting Bunco for us that night. Thursday is St. Patricks day and we always have a bit of fun those mornings. Check back tomorrow or Wednesday and I'll share my plan. I also want to head to the mall and let the girls play at the indoor play place and I want to window shop. I cant tell you the last time I was at the mall. I don't often have the patience for it but it's amazing what a few free hours can do for my patience meter. Lastly, since we're enjoying beautiful weather here I want to take the girls to the zoo before it gets too hot. Fun times!

Tuesday - Big Dinner Salad with Grilled Chicken
Wednesday - Bunco Night! (Peter Piper kids for the kids with Brad and I am making Quiche for Bunco's breakfast themed dinner)
Thursday - Green Eggs, Green Bread (broccoli bread) with ham and cheese, Green monkey bread
Friday - Dinner out
Saturday - DATE NIGHT! Yea!!!

New week, Fresh Start

Ahh Monday. Normally I'd be complaining about how much I loath thee, yet I find myself strangely motivated and energized this morning. It could be the Vinte Coffee Frapachino with two extra shots that I've already downed but I think its just my normal charisma shining thru. (Yea right! Go Starbucks!) I plan on cleaning, organizing and prep'ing a lot today.
My kids are finally feeling healthy enough to be back to their normal energy level. Someone remind me next time they are sick to cherish the quiet time please! They both still have a terrible cough but other than that they are on the mend. Attitudes are another story! Because they had such a hard time breathing due to the cough and sore throats I tried very hard to keep them happy so they didn't cry because if they did it ended in gagging and or vomit only exacerbating their circumstances. A.K.A I gave them what ever they wanted when ever they want just to keep them happy. Well, as great as that worked while they were sick, its biting me in the butt now! Hailey understands a bit more but Kenna is just a whiney mess right now.

I was so frustrated with her attitude on Saturday night that I had to step back, let Dad intervene and go take a bath to clear my head. I decided that maybe part of her frustrations are due to not being included in life but rather taken along for the ride weather or not she wants to. Part of that comes with being a kid I know, but I was much better at including Anthony and Hailey than I am with Makenna. Things like having a choice of drinks, lunches and snacks and getting to help with "big girl" things like picking out her clothes, choosing her hair ties and helping in the kitchen. Some of those things may sound trivial but I did all of those with the other two but I realized that Hailey still runs the roost when it comes to a lot of those things and Makenna is just taken along for the ride. So, I talked to Brad about it and we agreed that we need to include Makenna more in the decisions of her life. That sounds more dramatic than it really is but hopefully it still makes sense. Time out's aren't working to change the behaviors so I'm trying another approach.

Sunday was a bit better but I'll admit, dinner time is hard. I just want to do it myself, get it done and be over with, so stopping to include her is a bit of a hassle. She was a gem at lunch helping me make the Mac&Cheese and actually sat down then entire meal time peacefully and ate her food with out whining or crying. It's going to take patience and discipline on my part to do this, I really hope it works. Wish me luck!

On a completely different tangent, last week was a complete "Swing and a Miss" as far as food is concerned. I made 4 different meals that no one but me would eat, with the exception of the soup, even I wouldn’t eat that!
Italian Sausage and peppers in a ricotta cream sauce
BBQ pop-overs
Mango chicken lettuce wraps
Potato, bacon, cheddar soup

Last nights soup was so bad that Brad went out to get us take-out instead and for those of you that know Brad, that’s a big thing! He never likes to waste food! Even though I followed the recipe, it just tasted like watered down grease! Bleh!

A few were new recipes and the mango chicken wraps, from Stephanie O'Dea's Crockpot365 were a hit last time but not this one for some reason. I think they're major Yum, but then again, I love her website for crock pot wonders.

One recipe, from the Pillsbury website is worth experimenting with. I thought these BBQ pop-overs were great! Brad said they were ok, just not "dinner" material. I did use shredded beef instead of the ground beef because I thought it would taste better. The kids would have liked them I think if the shredded beef was in shorter strands, if that makes sense. When they would try to bite into it they would always get too much or end up with strings hanging out of their mouth.

So, needless to say, this week I’m sticking with good 'ol tried-and-true stand-by's.

I am doing another big baking day tomorrow. The theme is "convince." I have been stock piling a lot of snack and breakfast items with the recent grocery sales so not all of this is homemade, obviously, but it's still part of my plan to get it all separated into snack size baggies ready to grab and go. Here's the plan:

Cereal bags (divided into small travel size bags for breakfasts on the go) x 24

My cousin, Missy, is due here around noon so we'll be working fast to get it all done. I'll be sure to post pictures and recipes. Keep your fingers crossed that my plan with including Makenna doesn't backfire on me tomorrow.

Dinner: Pizza and AMAZING Waldorf inspired Salad

Dinner: Fried eggs over brussel sprout hash with French Toast casserole

Wednesday
Dinner: Asparagus pesto flat iron steak with pasta (how many times can I put this on the menu before I actually make it? I swear, I’m making it tonight!)

Thursday
Dinner: Pork and Hominy stew

Friday
Dinner: Eat out

Saturday
Breakfast: Apple muffins and fruit salad
Lunch: Leftovers
Dinner: Garlic Cashew Chicken


The Waldorf Inspired Salad was so delish! It was lettuce, carrots, red grapes, walnuts and the crunchy apple strings from here, tossed with blue cheese dressing. I had to have seconds and barley touched my pizza. The case of apples is totally worth it just to make the crunchy apple strings for this salad. Seriously, run out, buy some apples and make these, then make the salad, you won't be disappointed!

The Brussel Sprout hash may sound a bit odd, and this picture does not do it justice but it was divine!

I par-boiled some fresh brussel sprouts till they were just barley soft. Then I sautéed up peppers and onions, added in some frozen tater tots (did you know they make the BEST hash browns?!) then added in the brussel sprouts. A few pat's of butter and a good sprinkle of salt and pepper and viola - Brussle Sprout Hash. Perfect perch for a few over medium fried eggs.

This is one of those meals that almost looks healthy because of the bright green from the brussel sprouts, but lets face it folks, there is probably more calories in this one meal than we should eat in one day. Maybe that's why it was so good?

Weekly meal 1/31/10

I'm a bit behind on my week. That happens sometimes, even to the 1950's housewife. *smile*
My little (he's 23, so not so little!) brother is here and we've been spending a lot of time together.
I haven't even done my grocery shopping for the week. Bad huh! It would help if I had made up my meal plan before just now. I'll post the recipes and steps for Wed, Thur and Sat's meals. You know it's a good meal plan when you can't wait to make each dish! If you are going to make these and need the shopping list beforehand, just leave a comment or email me and I'll get it out to you.

*The veggie lasagna was wonderful! Not quite as rich as store or restaurant ones but it was better lighter and packed with way more veggies. The only thing was that it was very watery. I think it because we didn't sauté the veggies first like the recipe called for. We shredded all our veggies so we didn't think they would need the sauté to soften them. Now I see that it probably would have helped lower the water content. This version still tasted great but it would have made a better presentation if the water was removed from the veggies first. I think if you lightly salted the squashes and let them sit in a colander for a bit it would drain just as well and with put the added oil of the sauté.
